Cilantro-Lime Rice

1 lime (2 Tbsp lime juice works fine)
1 C rice, white
2 Tbsp oil, vegetable
1 pinch salt, kosher
1.75 C water
¼ C cilantro (chopped)


Instructions

  1. Heat oil in a saucepan over medium-high to high heat

  2. When oil is hot, add lime juice and rice, stirring often to prevent burning - you're infusing the rice with the lime juice.

  3. Add water and salt, unstick any rice that stuck to the pan, allow to come to a boil.

  4. Turn down heat to a simmer and simmer covered for 10-15 minutes, or until all water has been taken up by rice.

  5. Remove from heat, add chopped cilantro and, if desired, more salt.
