Cilantro-Lime Rice
1 lime (
2 Tbsp lime juice works fine
)
1 C rice, white
2 Tbsp oil, vegetable
1 pinch salt, kosher
1.75 C water
¼ C
cilantro
(
chopped
)
Instructions
Heat oil in a saucepan over medium-high to high heat
When oil is hot, add lime juice and rice, stirring often to prevent burning - you're infusing the rice with the lime juice.
Add water and salt, unstick any rice that stuck to the pan, allow to come to a boil.
Turn down heat to a simmer and simmer covered for 10-15 minutes, or until all water has been taken up by rice.
Remove from heat, add chopped cilantro and, if desired, more salt.
