Hot Sauce

This recipe is really a starter - substitute peppers as you see fit, and feel free to add whatever you think it needs... I've seen recipes with carrots and sweet potatoes, for example. Or bananas and rum. Hot sauce is an art.
20 peppers, jalapeno (sliced, feel free to substitute an equivalent amount of any other hot pepper)
1 tsp oil, vegetable
¾ tsp salt
2 C water
3 clove garlic
1 C vinegar, white
½ C onion (minced)


Instructions

  1. In a medium glass or enamel lined sauce pan over high heat, combine oil, peppers, garlic, onion and salt; saute for 4 minutes. Add the water and cook for 20 minutes, stirring often. Remove from heat and allow mixture to cool to room temperature.

  2. Puree until smooth using immersion blender. With the processor running, slowly add the vinegar.

  3. Pour into a sterilized jar with a tight lid. This sauce will keep for 6 months when stored in the refrigerator.
