Bobby Flay's Jalapeno Hot Sauce

10 peppers, jalapeno (seeded and coarsely chopped)
1 clove garlic
6 Tbsp oil, vegetable
1 onion, sweet (small, coarsely chopped)
2 C vinegar, rice
1 C water
2 tsp salt, kosher
1.5 Tbsp honey
¼ C cilantro


Instructions

  1. Heat 2 tablespoons of the oil in a medium saucepan over medium heat.

  2. Add the onions and jalapeno and cook until soft.

  3. Add the garlic and cook for 30 seconds.

  4. Add the vinegar and water and bring to a simmer; cover the pot and let cook for 10 minutes.

  5. Transfer the mixture to a blender, add the remaining oil, salt, honey and cilantro and blend until very smooth, about 2-3 minutes.

  6. Transfer to a container with a lid and refrigerate after using. Should keep a few months.
