Alton Brown's Guacamole

This is a complex guacamole that goes WAY past what's necessary - avocado, lime, and salt. And cilantro, in my opinion. But it's a solid list of many of the things you can do to 'kick it up a notch'
3 avocados
1 lime
½ tsp salt, kosher
½ tsp cumin
½ tsp pepper, dried hot (Alton calls for cayenne)
½ onion (diced)
½ pepper, jalapeno (seeded and minced)
2 tomatoes, paste variety (seeded and diced)
1 Tbsp cilantro (chopped)
1 clove garlic (minced)


Instructions

  1. Scoopp avocado into bowl with lime juice, toss to coat (to keep avocado from browning), and dump remaining lime juice into a small container for later

  2. Add dried ingredients, mash with a potato masher

  3. Add fresh ingredients, fold in

  4. Add lime juice

  5. Allow to sit at room temperature for about 1 hour before serving
