Chocolate Sushi

This is a really sweet dessert recipe invented by me, Megan, Eric Neuman, and two people I haven't talked to since college named Ruchi and Max. I think we can reduce sweetness by using unsweetened chocolate, but I have not made this enough times to try that yet.

Instead of strawberries, we have also done cherries, raspberries, Swedish Fish (for comedic effect) and cake frosting. For example, we have done chocolate cake with peanut butter frosting on the inside. It's a pretty awesome idea, guys.

24 oz chocolate chips
1.25 C corn syrup, light (may reduce to 1-1/8C )
1 prepared cake
2 strawberry
1 Tbsp sugar, powdered


Instructions

  1. The day before you want to make the 'sushi', bake the cake (I just use box mixes according to their directions).

  2. Also on the night before, we will make the 'plastic chocolate': heat the chocolate chips in a double boiler or carefully in the microwave, and mix in the corn syrup. allow it to cool to room temperature overnight (I either do this in a bowl, or even better, wrapped up in Saran Wrap).

  3. On the day of the sushi-making, cut some of the chocolate plastic off the block. We want to try to roll it out with a rolling pin.

  4. Spread powdered sugar on a cutting board or on wax paper, put it all over the chocolate block you cut off, and all over the rolling pin. Then try to roll out the chocolate. If it's too hard, try to warm up the block a few degrees. If it is really soft, cool it down in the fridge.



  5. To make the rolls, spread out the chocolate plastic as thin as reasonably possible, but thick enough that it can be handled. Perhaps as thick as a pencil lead. You want it to be about the size of a sheet of nori used in making sushi.

  6. Transfer the sheet to a sushi rolling mat, preferably with a piece of powdered-sugared wax paper between the mat and the chocolate.

  7. Now we make the sushi roll. It would be really advantageous for you to be at least minimally skilled in making real sushi. Use the cake as you would use the rice - just rip it out of the cake pan and press it in the roll - and use the strawberries as you would put in crabmeat or shrimp or avocado.

  8. Roll the sushi roll and cut pieces just like you would sushi.
