2 egg (beaten) ½ C sugar 1 onion (large and diced) 1 C flour, self-rising 1 C cornmeal 1 qt oil, vegetable (for frying)
Instructions
In a medium bowl, mix together eggs, sugar, and onion
Blend in flour and cornmeal
Heat oil to 365 degrees
Drop by rounded teaspoon-full until golden brown -- note that larger hush puppies or having the oil too hot will cook the outsides but leave the insides gooey (not good). It's important to keep the oil close to 365, which requires close attention
