Chorizo and Manchego Stuffed Mushrooms

If so inclined, adding peppers and cheese sauce (milk and cheese at minimum) to the stuffing would make it into a nice dip for tortilla chips. This site has a recipe for homemade mexican chorizo if you can't find it in the grocery store
1 C chorizo, Mexican
24 mushrooms (possibly more)
6 Tbsp butter
1 C onion, sweet (diced)
3 clove garlic (minced)
½ C bread crumbs
4 Tbsp cheese, manchego
1 Tbsp thyme (dried)
½ Tbsp marjoram (dried)
½ Tbsp oregano, dried
6 Tbsp oil, vegetable


Instructions

  1. Sautee onions and garlic in butter on medium heat until onions are translucent. If you want to include the mushroom stems, do so now.

  2. Mix in chorizo for 5-10 minutes until mostly cooked

  3. Add breadcrumbs, cheese, and herbs and mix

  4. Clean mushroom caps, lightly coat them in the oil and arrange in baking pan

  5. Preheat oven to 400

  6. Stuff mushrooms. If desired, top with additional thin slices of manchego, garlic salt, and/or paprika.

  7. Bake for 15 minutes or until mushrooms are darkened from being cooked through
