Mexican chorizo

Loose chorizo, different than the red Spanish chorizo which is cased
1.1 lb. pork, ground
2 bay leaves
5 cloves
1 tsp coriander (whole, less if ground)
1 Tbsp cumin (whole, less if ground)
¼ tsp cinnamon
½ tsp oregano, dried
½ tsp thyme
1 Tbsp garlic powder
1 tsp salt
½ tsp black pepper
2 Tbsp paprika
1 Tbsp pepper, dried hot (cayenne or chili powder)
3 Tbsp vinegar, apple cider


Instructions

  1. Grind bay leaves, cloves, coriander, and cumin in mortar and pestle or grinder

  2. Mix everything together, let it sit together at least overnight before cooking
