Bacon Poblano Mac and Cheese

This is a basic stovetop mac and cheese recipe, plus a little kick. Good in stuffed mushrooms but try a smaller pasta like ditalini and add some more salt and paprika
3 C pasta (a box, macaroni is the obvious choice)
¼ C butter
3 pepper, poblano
¼ C flour, all-purpose
2 C half and half
2 C cheese, cheddar (extra sharp, shredded)
1 C cheese, mexican blend (shredded)
½ tsp salt
1 pinch black pepper
1 tsp mustard, dry
½ lb. bacon (or more!)


Instructions

  1. Cook pasta and crisp bacon

  2. In saucepan, melt butter on medium heat

  3. Dice peppers, sautee 2-3 mins in butter

  4. Add flour, mix well for another 2-3 mins

  5. Add half and half, salt, pepper, and mustard, stir well for another 2-3 mins

  6. Take off of heat, add all cheese, mix until melted

  7. Add crisped and crumbled bacon, mix

  8. Add drained pasta, mix
