Freezer Spaghetti Sauce

This is a basic spaghetti freezer sauce that does not call for de-skinning the tomatoes. This can be done in a slow cooker on low as well (after sauteing on high)
4 onions (chopped)
4 clove garlic (minced)
1 pepper, sweet (chopped)
½ C oil, vegetable
16 C tomato, paste variety (chopped)
2 Tbsp oregano, dried
2 Tbsp basil, dried
¼ C parsley, fresh (chopped)
¼ C sugar
2 Tbsp salt
¾ tsp black pepper
6 oz tomato paste (1 can)


Instructions

  1. Saute onion, garlic, and green pepper in oil

  2. Add everything else (except tomato paste), cook for 2-3 hours on low heat.

  3. Let sauce cool before loading into freezer bags

  4. The paste, if desired, is for after thawing. Mix it in to make the sauce thicker.
