Colcannon

I think this is an Irish dish that is basically mashed potatoes and cabbage mixed together. Except it also has bacon.
3 lb. potato
2 stick butter
1.25 C milk (hot)
1 head cabbage
1 lb. bacon (cooked)
4 scallions (finely chopped)
1 pinch black pepper
1 pinch salt
1 pinch parsley, fresh (chopped)


Instructions

  1. Make mashed potatoes by boiling potatoes, mashing, adding 1 stick butter, milk, salt, and pepper, and mashing some more

  2. Boil cabbage for several minutes (until it turns darker green), turn off, add 2Tbsp butter and cover for 2 minutes (this tenderizes it), drain, and chop well

  3. Bring bacon to a boil in a pot of water, simmer until tender, drain, and chop well.

  4. Mix everything together. Serve with a dollop of butter in the middle.
