Mint Jelly

Original recipe makes 2 pints
1.5 C mint, fresh (any mint will do)
2 Tbsp lemon juice
2.25 C water
1 drop food coloring (green)
3.5 C sugar
3 oz pectin, liquid


Instructions

  1. Crush mint leaves

  2. Add to boiling water

  3. When water begins to boil, turn off, cover, and allow to steep for 10 minutes.

  4. Strain off 1 and 2/3 C of your "mint tea", put that amount back into pan, throw out the rest

  5. Stir in lemon juice, food coloring, and sugar while over high hear.

  6. Bring to a boil, stirring constantly

  7. Add pectin when boiling, allow to boil for one additional minute while stirring

  8. Remove from heat, skim off foam, transfer to jars

  9. Wipe rims and place lids

  10. Process 1/2 pints 10 minutes in boiling water canner
