Roasted Pork BBQ

¼ C sugar, brown
1 Tbsp coriander (ground)
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp salt, kosher
1 tsp black pepper
1 tsp cumin
2 tsp cinnamon
5 lb. pork butt (or shoulder, fat cap scored)


Instructions

  1. Combine dry ingredients to make a rub, rub it into pork, especially in fat cap scores

  2. Allow to rest for 2+ hrs in fridge, wrapped

  3. Cook at 325F for 3 hr covered, 45 mins uncovered. Alternatively, try 8 hours in a slow cooker on high - until internal temperature is 200F.

  4. Allow to rest for 20 minutes
