Pollo a la brasa

1 chicken, whole (about 3.5 lb, quartered)
⅓ C soy sauce
2 Tbsp lime juice
5 clove garlic
2 tsp cumin
1 tsp paprika
½ tsp black pepper
½ tsp oregano, dried
1 Tbsp oil, vegetable
1 lime


Instructions

  1. Marinate chicken in mixture of soy sauce, lime juice, garlic, cumin, oregano, paprika, black pepper, and oil for 8-24 hours

  2. Grill on medium heat for 30-35 minutes on an oiled grill rack (medium-high is when you can hold a hand 5 inches above grill for 3-4 seconds), turning once Alternatively, chicken can be roasted at 500F in a roasting pan with 1C water for 30 minutes, then covered with foil and cooked for another 15 minutes.
