Simple Kale Quiche

1.5 lb. kale (one large bunch, roughly chopped)
salt to taste
black pepper to taste
1.5 C half and half
2 egg
4 oz cheese, gruyere
1 pinch nutmeg
1 pie crust
2 Tbsp butter


Instructions

  1. Preheat oven to 350F

  2. Boil kale until starting to break down, about 3 minutes - Drain, cool, and remove as much moisture as possible

  3. Whisk half and half with eggs in large bowl.

  4. Mix kale, cheese, nutmeg, salt, and pepper into eggs.

  5. Pour mixture into pie crust

  6. Put pie plate onto baking sheet and into oven for about 35-40 minutes - center should be set.

  7. Cool for at least 15 minutes before serving
