Basic Marinara
Recipe from http://www.formerchef.com/2009/09/01/how-to-make-basic-marinara-sauce/

12 C tomato, paste variety (peeled and seeded)
2 onions, sweet (peeled and diced)
2 Tbsp oil, olive
6 clove garlic
basil, fresh to taste
oregano, fresh to taste
thyme to taste
½ C wine, red
salt, kosher to taste
black pepper to taste


Instructions

  1. Saute onions in large pot on medium heat with olive oil

  2. Add garlic for about 5 minutes. If using dried instead of fresh herbs, add them here.

  3. Deglaze pan with wine, cook 2 more minutes

  4. Add tomatoes, stir to combine and bring to a simmer

  5. Cook on low for at least 2 hours, stirring occasionally. The sauce is done when thick. Some people test this by attempting to stand a wooden spoon up in the sauce.

  6. If you're using fresh herbs, put them in here at the very end. Also, salt and pepper to taste.
