Alton Brown's Steak

1 steak, ribeye (ribeye preferred, recipe works for any steak)
salt, kosher to taste
black pepper to taste
1 Tbsp oil, vegetable (should be enough to coat steak)


Instructions

  1. Get the steak out of the refrigerator. It should be near room temperature before cooking.

  2. Preheat oven to 500 deg F, preheat pan on stovetop on high. If you're not using an oven-safe pan (e.g. cast iron), put a tray into the oven to preheat as well.

  3. Coat steak with oil - vegetable oil is preferred but generally, choose an oil with a high smoke point.

  4. Pat a generous amount of salt and pepper onto the steak.

  5. Sear the steak, about 1 minute per side

  6. Put into oven, either in the same pan (if you used something oven-safe) or onto preheated tray. Depending on steak thickness and desired doneness, this can take 4-10 minutes - flip halfway through cooking.

  7. Allow to rest on a convex surface, like on top of an upside-down bowl, for 2-3 minutes.
