Elote

This is a good recipe for an elote dip, but there's a lot that can be modified for your taste. For example, instead of making it into a dip-like mixture, heat up the sauce separately and brush it on ears of corn (this is more correctly 'elote'). Also, instead of hot sauce, try cumin, garlic powder, and ground chipotle or cayenne. Chicken stock is not really required to make this recipe work either, it just makes the end result more creamy.
6 ear(s) corn
1 C mayonnaise
1 Tbsp hot sauce
1 lime (2 Tbsp lime juice may be substituted)
1 tsp salt, kosher
1 tsp black pepper
1 tsp sugar
¼ C chicken stock
¼ C cheese, cotija (parmesan is an acceptable substitute)
2 Tbsp cilantro


Instructions

  1. Grill the corn over medium-high charcoal - this gives a nice char and smoky flavor, but any method of cooking the corn works

  2. Cut the kernels off the cob

  3. Mix and heat all ingredients but cilantro in a saucepan, including corn kernels

  4. When warmed through, transfer to serving bowl, mix in cilantro, and serve
