Bacon-Simmered Kale

1.5 qt kale (coarsely chopped, measured loosely)
½ lb. bacon (chopped)
4 clove garlic (minced)
1 tsp vinegar, red wine
salt, kosher to taste
black pepper to taste


Instructions

  1. Crisp bacon on medium-high heat in a large pan, or a pot

  2. Turn the bacon down to low; leave the fat

  3. Add the garlic; simmer for 30 seconds to a minute

  4. Add the kale and turn occasionally - kale reduces quite a lot while cooking

  5. When reduced - a few minutes - take off the heat. How much to cook it down is personal preference - if you like your greens to crunch and snap, simmer it less; if you like it completely wilted, simmer more.

  6. Splash on some red wine vinegar, salt, and pepper, and enjoy
